            <description>Your culinary career starts today! ACI Instructors Chef Randall Foote and Chef Mark Maccherola are beginning new Culinary Arts classes today. Basic Culinary Arts students are given a thorough introduction into the basic skills, techniques, concepts, and theories involved in professional cooking. Emphasis is given to classical French cooking theory, including The Principles of Escoffier, The Mother Sauces, and a variety of traditional modern preparation techniques.
